Olive Oil Orange Cake

Did you know that you can use olive oil for desserts too?
This is not your typical fruit cake ... it's better! Who knew that combining these ingredients could produce such a burst of flavor? There is something sublime about the combination of orange cake and olive oil. The cake is moist and rich, while citrus gives it a wonderful fresh aroma!

Instructions
Heat oven to 350 F.
Take a round cake pan and spray with olive oil.
Take a mixing bowl and add the zest and juice of 2 oranges, almond coconut milk , vanilla extract, agave, olive oil. Mix until combine.
In another bowl add spelt flour, almond flour, baking soda, baking powder and salt. Mix to combine.
Pour the dry ingredients into the wet ingredients and whisk until smooth.
Pour the batter into the baking dish and bake for about 40 minutes.
Let it cool down completely before serving.
