Crunchy Lentil Salad


Description

This recipe is adapted from “Healthy Vegetarian Pleasures” by Jeanne Lemlin.  It is especially good when made with Trader Joe’s cooked lentils, because they are always the perfect crunchiness. What's more, kids love this salad!

Prep time: 20 minutes

Ingredients

1 package
cooked lentils (Trader Joe's brand, preferably )

celery ribs (finely diced)

carrots (minced)
1⁄4 cup
red onion (finely chopped)
1⁄3 cup
fresh parsley (minced)
1⁄4 cup
olive oil
2 tablespoons
lemon juice
2 cloves
minced
1⁄4 teaspoon
dried thyme
1⁄4 teaspoon
ground cumin

Instructions

Combine the lentils, celery, carrots, onions and parsley in a serving bowl. Whisk together remaining ingredients. Pour over the veggies and toss. Serve at room temperature.
